Cabinattendants seem generally satisfied with the majority of caterers(配餐公司) theyuse. In a survey about aviation caterers, most cabin attendants found that thecaterers usually have an experienced staff, qualified chefs and a good product.While there may be occasional lapses in good service or quality, most catersreceive high marks from cabin attendants.

Thesuccess is in the “whole package”. There’s no part of the catering process thatisn’t critical, quality food, attractive presentation, proper packaging, on-timedelivery are all important.

Somecaterers rank high because not only do they have quality ingredients and aninteresting menu, but also they have refrigerated vehicles, a rapid turn-aroundfor linens and dining ware and a 24-hour hotline service.

Inaddition to the full-time chefs, they have a long list of colleagues forspecialty items. In America, chefs at New Horizons are well known for theirin-house breads and pastries, and in particular for their Florida stonecrab.

AChicago-based caterer, the company provides meals for a “huge number of sportsteams”. In the face of fierce winter winds, ice and snow, Georgis provides goodcatering from its location near the metropolitan center to virtually everyoutlying airport. It’s always a challenge to cater a flight for certain specialpassengers, such as those with religious dietary rules.

Whilecatering generally receives high masks from most of the cabin attendantsresponding, there were a number of highly critical comments.

Costand packaging are generally still big issues. A catering order for breakfast andlunch for 200 passengers excluding wines is regarded as too high for theairlines.

Passage3

Thecabin crew check that all the passengers are on board, and the doors are closedand locked. Gently the walkway swings back from the fuselage, the body of theaircraft, and a specially designed powerful tractor pushes the giant 747 awayfrom the loading bay. Meanwhile, the airport traffic control has given clearanceto start the engines and the flight crew carries out all the last minute checks.All the systems are in full working order, and the wing flaps(襟翼) and flyingcontrols are tested.

Atthe same time the cabin crew check that all the passengers are wearing theirseat belts properly and then demonstrate the emergency procedures. They pointout the exits on the plane, and demonstrate how to wear and inflate the lifejackets located under each seat. Lastly they show how to use the oxygen masksthat automatically fall from the ceiling should it become difficult for thepassengers to breathe.

Apuff of smoke from the jet, and a slow whine gradually becomes a low roar(咆哮,巨响)as the first engine is started up. One by one the four engines come to life,though there is little to see apart from the shimmer of the exhausts. After afinal signal to the ground crew that the engines are running normally, thecaptain eases the plane along the network of taxiways that lead to the runway,and takes his place in the queue for take-off.

Witha thunderous roar, the plane departs. With flaps fully extended for take-off the747 turns into the main runway. The pilot and co-pilot each place a hand firmlyon the throttle levers(油杆), and push them steadily forward. The vibration andnoise swells as the engines are brought up to full power. Suddenly the brakesare released, and the passengers are pressed back into their seats as all 313tons of the Boeing 747 accelerates up the runway.
